The garbage is taken out twice a day (end of first shift and end of second shift) and is usually done as an employee duo. This means that once all of the garbage in the restaurant is collected and placed into the garbage bins in the break room at the end of a shift, then two of the employees escort the bins to the trash room.
In order to do this, one of the employees needs to obtain the garbage room key and has to bring the bins with another employee through the carpeted path to the outside door and into the trash room on the other side of the building.
Once in the trash room, start putting the filled garbage bags in the trash compactor and turn it on once the compactor is filled. Be sure to not get too close to the compactor and handle it with caution.
Things to remember:
- Break or Flatten the boxes before putting them in the trash bin

- Watch out and do not spill flour in the backroom. If there is any flour or trash spilled, clean it.
- Don’t stack the empty pickles buckets on the floor or around the trash room. The proper way to dispose of it is to put it in the trash compactor with the other trash and let it go through the press.
