Learn the basic steps of how to make the Khachapuri bread dough.
1. Mise en Place (Scaling) #
Before starting the bread-making process, it is important to gather all of your ingredients and measure them accurately.
2. Mixing #
Combine all the ingredients in the bowl mixer machine. We have a poster in the storage room for the ingredients and measurements needed for one batch.
3. Make Dough Balls #
By making dough balls take note that we have an exact weight measure for each ball. Each dough ball weighs 250 grams.
4. Kneading #
The dough is kneaded by hand until it is smooth and elastic.
5. Shaping #
We must note that we should stretch the dough to a decent size. To do so, use the pizza plate we use in the store as your guide and stretch the dough to its right size based on that pizza plate.
NOTE: #
We have a poster for the measurement of fillings and toppings for each flavor of Khachapuri. Make sure you put the proper amount into the boat, but if you’re unsure, put the fillings in a hot cup, check the measurement with a scale, and then transfer the fillings to the boat.
