  • Prepare the cheese grater, 16 lbs of Panela and 10 lbs of Mozzarella
  • Slice the cheese into smaller pieces
  • Grate the cheese
  • Get flour using the scooper and put it in the bowl. Use a weighing scale and it should be close to 450 grams.
  • Pour the egg liquid into the bowl full. It should be close to 755 grams
  • Then, pour the measured ingredients into the cheese but after adding the flour to the cheese, mix a little and only then add the egg yolk and milk so that there are no lumps and the cheese does not darken
  • Add 3 teaspoons of salt
  • Then, add the milk.
  • Mix it all together.
