Day opening (6:30am – 8:30am)

We have 1 team member on the opening shift:

  • Follow dough schedule for the day.
  • Finish off kitchen debt from the previous shift if anything left.
  • Submit the opening complience report.
  • Grind meat and cut the bacon for the whole day.
  • Cleans up raw meat before the rest of the team arrives at 8:30 am.
  • Checks critical inventory for the day.
  • Cook beans in a pressure cooker.
  • Starts prep and cauldrons for the morning shift.
  • Startb dough balls at 8:15am.
