First team member completes orders, stays on the oven station, and fulfills orders. Cleans the oven, the surfaces at the oven station, close the lines, washes the kitchen working surfaces, sweeps the kitchen. If there are cooked fillings(stroganoff, veggie and etc), weigh them and move them into the container, write the date on the container sticker, and then move it to the fridge. Sweep the floors.
The second team member takes out the trash, wash the dishes. Helps the first one.
It is important to leave at 7:30 pm. If we do not have time for something, then we do the highest priority first.
Highest priority:
- Finish live orders
- Finish fillings
- Weight everything for inventory
- Take out the trash
- Take pictures of the back hall
- Wash the dishes
The lowest priority is to sweep and mop the floors, clean the toilet.
Must be done:
- Finish live orders
- Finish filings
If the must be done not done by 7:30 pm, then the manager lets everyone go at 7:30 pm. Stays alone at the restaurant and completes must-be-done tasks. After finishing off with must-be-done tasks write an explanatory note (why it happened and how it can be avoided next time) and shares it with leadership.
